ci: test that any `productLinks.documentation` URLs in the code do resolve to URLs

When we embed a link to the documentation site via documentationUrl and using GlobalConfig.get('productLinks').documentation, we should still have some confidence that the URL(s) are pointing to a valid URLs.

We need to introduce a means to test this.
